Ingredients:
1ā1 1/2lbs Chicken breast, cubed
1 14oz Can Chickpeas, drained & rinsed
3 C Red potatoes, cubed
1 pint grape tomatoes
Salt & Pepper
1 tsp paprika
1/2 tsp garlic powder
1/2 Lemon juice
1/4 Red onion sliced thin
Ingredients for Green Goddess Dressing:
1/4 Green onion
3 tbsp Dill, fresh
1 Clove garlic
1/2 Lemon juice
1/4 C Parsley, fresh
1 tbsp Dijon Mustard
1/2 tbsp Honey
1/4 C Avocado Oil
Salt & Pepper
2/3 C Yogurt
Directions:
1. Preheat oven to 425F. Line a baking sheet with parchment paper
2. In a large mixing bowl, combine all the ingredients for the sheet pan. Mix well. Pour the ingredients on the sheet pan and roast for 30 Minutes
3. While the chicken mixture is baking prepare your dressing in a food processor or blender. You can serve the sauce on the side as a dipping sauce or poured over the chicken mixture.
*Green Goddess dressing can last in the refrigerator for 4 days!
