Ingredients: (Makes 2-3 servings)
1 package skillet gnocchi (potato or cauliflower) $2.99 at Target
1 12 oz package frozen peas (0.99 cents at target)
1/2 C Fresh basil $2.49 at target
3 tbsp Olive oil + 1 tbsp
Salt & Pepper
Optional: Parmesan cheese, pine nuts, hemp seeds, microgreens (I use kale microgreens)
Dinner total $6.47! If you make it for 4 people $12.94
Directions:
1. Microwave your peas as directed on the package. While the peas are cooking heat a skillet and add 1 tbsp olive oil.
2. Add the gnocchi to the skillet and cook on medium-high for 5-6 minutes until crispy and lightly browned. Sprinkle a pinch of salt and pepper on the gnocchi
3. While the gnocchi is cooking prepare the pesto. Add 2 C of peas to a food processor, the basil, 3 tbsp olive oil salt and pepper to taste. Purée until it creates a smooth paste. If you’re using parmesan cheese, pine nuts or hemp seeds you can add 2 tbsp and purée)
4. Plate your pesto purée, too with gnocchi and the non pureed peas. If you’re using parmesan cheese or microgreens you can sprinkle that on as well
