
What does your body need when fighting off the flu? Hydration, vitamins, minerals and protein! This soup is ready in less than 30 minutes and can help relieve congestion, headaches, sore throat and sometimes nausea. You can even make this ahead of time and freeze it up to 3 months!

Ingredients:
2 Cloves Garlic
2 lbs Chicken thighs (If vegan substitute edamame or tofu)
6 Carrots
3 Celery ribs
2-3 Sweet potatoes
1 Yellow onion
4 C Chicken broth
2 tbsp Olive oil
1 tsp Satl
1/2 tsp Black pepper
1 tbsp Fresh parsley
Directions: Makes 4 servings
1. In a large pot sauté the carrots, celery onion and sweet potatoes with 1 tbsp oil for 5 minutes. Add the garlic and stir frequently for 1 minute
2. Add the broth and chicken and let the mixture boil for 20 minutes.
3. Shred the chicken and return it to the pot.
4. Remove from the heat and serve with fresh parsley sprinkled on top.
*If your kids only like creamy soups take 1 C. of broth and a handful of cooked veggies and purée them and add them back to the pot!
