
This bowl is packed with protein, fiber and nutrients! It’s satiating and budget friendly, two things that often don’t come together. I encourage you to add your own flare to this recipe with feta cheese, herbs or sauces!

One pan, dairy free, nut free
Ingredients: Makes 4 servings
4 Chicken sausages, casing removed and sliced
1 Head broccoli
1 Red bell pepper
1 Red onion
1 Sweet potato, large
1 Zucchini
3 tbsp Olive oil
1 tsp Garlic Powder
1/2 tsp Salt and black pepper
Red pepper flakes
Balsamic glaze
Garlic herb quinoa, cooked
*I made a dairy free pesto cream for my sauce. DM me if you want that recipe!
Directions:
1. Preheat oven to 425. Line two sheet pans with parchment paper
2. Using a large mixing bowl add all the veggies and sausage. Pour the seasonings and olive oil over them and mix well until everything is coated evenly. Pour the contents of the bowl on to the sheet pans evenly. Nothing should be stacked. They should have room to make create one layer
3. Roast for 25 minutes, rotating the pan half way. When finished increase the oven to broil for 2-3 minutes until crispy. **Watch them closely broil works very quickly!
4. Serve over quinoa with balsamic glaze or your favorite toppings on the side!
