Ingredients: Makes 4 adult servings
2 C Pasta (use banza or gluten free for gluten free option)
2 C Broth
2 C Tomato sauce
1 Onion, diced
1 Zucchini, diced
4 Carrots, diced
1 lb of ground beef
1 tsp Salt
1/2 tsp Pepper
1 tsp Paprika
1 tsp Chili powder
2 tbsp Olive oil
1 clove garlic, minced
3 C Spinach
Directions:
1. In a large skillet heat the olive oil. Add the onion, garlic, zucchini and carrots. Cook 5-7 minutes until tender and starting to brown
2. Add the beef and seasonings and cook until browned
3. Add the broth, tomato sauce and macaroni and cook covered for 15 minutes.
4. Add the spinach and let the pot simmer another 5 minutes and serve!
