If you want to make a healthy dinner in 15 minutes with little effort save this recipe! It’s only 5 ingredients!!! My toddler even loves this one!
1lb Chicken cutlets
2 tbsp fresh lemon juice
1 C Flour (if you want to use gluten free flour or almond you may need to egg wash the chicken first and then coat in flour)
2 tbsp Capers
1 C Chicken broth
1 tbsp Olive oil
1. Heat olive oil in a large skillet
2. While the the oil is warming up dredge the chicken in flour. Add the chicken to the skillet and allow it to cook 2-3 minutes until both sides are lightly browned
3. Add the broth, lemon juice and capers to the pan. Cover and allow to simmer for 10 minutes until the chicken is cooked. Flip the chicken one time half way through. The sauce will thicken as it cooks. Be sure to check the chicken towards the end so it doesn’t burn. If you need more liquid add more broth. If it burns it completely changes the taste
4. Serve warm with side of your choice (we like baked potatoes, rice, pasta or broccolini with ours)
