
This one-pot meal is easy to make, healthy, packed with protein, 5 veggies, fiber, vitamins and minerals. Every bite is full of satiating flavor and it’s even a low budget meal! It’s also gluten free and dairy free.
Ingredients:
1- 1 1/2lbs Ground turkey (If vegan add 3 more cans of beans-any kind)
1 15oz Can diced tomatoes, low sodium
1 16oz Frozen package of butternut squash or one whole fresh squash (frozen is cheaper and easier to work with, also $1 at target)
1-2 Green bell peppers, diced (if you don’t like peppers you can substitute zucchini)
1 Yellow onion, diced
1 Clove garlic
2 tbsp Olive oil or avocado
2 15oz Cans of red kidney beans, drained, low sodium
1 tsp Oregano
1 C Chicken Broth or broth of your choice
2 tsp Chili powder
2 tsp Pumpkin pie spice
1 tsp Salt
1/8 tsp Black pepper
2 tsp Cumin
Optional toppings: Avocado, cheese, vegan cheese, red onion, cilantro, sour cream
