
This breakfast is packed with protein and fiber to keep you full, balance your hormones for the day so you’re less likely to binge eat and it healthy for your gut!
The turkey sausage is the perfect mix of savory and herby that will make you feel satisfied. The vegetables are pure and simple.
Ingredients for Veggies:
2 C Cauliflower florets or one head
2 C Brussel sprouts (I didn’t have any today when I filmed this but I usually include them)
1 C Mushrooms
1 Onion, yellow
4 C Sweet potato (about 3 large sweet potatoes)
1 Zucchini
2 tbsp Olive oil
Salt + Pepper to taste
2 tsp Oregano
Directions
1. Preheat your oven to 425F
2. Dice all your vegetables. Mix with the olive oil and lay them flat on the sheet pan ( you may need two sheet pans if they’re small)
3. Bake for 25 minutes. They should be lightly browned. If not broil them for 2 minutes until brown. Be careful broil works very quickly!
Ingredients for Turkey Sausage: Makes about 12 (4 servings) :
1lb Turkey
3 Basil leaves, fresh minced
2 Cloves garlic, minced
1 tsp Fresh ginger, minced
1 1/2tbsp Green onion, minced
1/2 Tbsp low sodium soy sauce or tamari for gluten free
1 tsp Salt
1 tbsp Olive oil
Directions:
1. Split the mixture into 12 small pattie
*To bake: Bake at 400F for 20 minutes
*To fry: Add oil to a skillet and brown on each side about 10 minutes. Keep covered so they cook through
