Balanced Bite Cups

Ingredients:

1/2 C Tru Eats pancake mix, gluten free and made from almond flour and legume powder

1/3 C chia jam or mix 1 pint fresh raspberries with 1/2 tsp chia seeds and mash together. Let sit for 10 minutes

1/2 nut butter or sunflower butter

1/2 C dark chocolate chips, melted with 1 tsp coconut oil or avocado oil

Directions:

  1. Line a mini cupcake pan with parchment paper muffin liners
  2. Mix together the nut butter and Tru Eats until smooth
  3. Place about 1 tbsp of the mixture into each cup
  4. Top the with chia jam
  5. Melt the chocolate with oil by microwaving it 30 seconds at a time and mixing after each turn. It takes about 90 seconds total in my microwave.
  6. Layer the chocolate on top and freeze the cups for abut 3 hours
  7. When ready to eat let them sit at room temperature about 5 minutes before serving
