Caramelized Onion Mashed Potatoes

2lbs Russet potatoes
2 Large Yellow or visalia onions
1/2 C Chicken broth or broth of your choice I use Kitchen basics low sodium chicken broth
Salt + Pepper to taste •I added about 1 tsp is salt
1 tbsp Honey (optional if you want to skip the extra sugar)
3 tbsp Olive oil
Directions:
1. Wash and peel your potatoes. Cut them into quarters or smaller
2. In a large pot boil the potatoes for about 20 minutes until they’re tender and fall apart when you stick them with a fork
3. While the potatoes are boiling heat the olive oil in a large skillet. Add the onions and turn the heat to medium and let the onions cook down until completely caramelized (this can take up to 20 minutes) Stir them frequently to avoid burning, add extra oil if needed. It looks like a lot of onions but they shrink down quite a bit
4. Drain the potatoes when they’re done and using the same pot whip them with a hand mixer until smooth about 3 minutes. Add the broth, honey (if using it) salt and pepper and mix until combined about 1 minute. Add the onion and whip one more time and serve warm!
