Caramelized Onion & Sun-dried Tomato Pasta

Ingredients:
2 medium yellow onions, sliced thin
1 tbsp italian seasoning
2 tsp paprika
1 tsp salt
1 head garlic with the top cut off and some of the outer covering removed
1/4 C Sundried tomatoes, julienne
4 tbsp oil from the sundried tomato jar
1/2 C chopped fresh spinach
1 tbsp fresh diced parsley
3/4lb pasta, I used jovial farfalle, gluten free
*optional: 1/2 C coconut cream
*For protein you can add cooked chicken to the dish or use this pasta a side dish
Directions:
1. Preheat oven to 400F.
2. Add the onions, Italian seasoning, paprika, salt, sun-dried tomatoes and oil to a 9×9 baking dish and mix so the onions are completely coated. Add the garlic head to the center of the dish. Cover the dish tightly with tin foil and bake for 1 hour
3. In the last 10 minutes of baking boil your pasta and drain
4. After removing the baking dish from the oven add the spinach, parsley, pasta and coconut milk if using it. Serve warm
