Chicken Pesto Wrap Meal Prep

Ingredients for pesto:
2 C fresh basil
1 clove garlic
1/2 lemon juiced
1 tsp salt
1/4 C hemp hearts
1/3 C Olive oil


Ingredients for wrap: Makes 1 wrap
1 C Chicken, rotisserie or breast chopped
1/2 C cherry tomatoes halved
1 wrap (you can choose gluten free, low carb whatever fits your diet)

For the side I used 1/2 an avocado seasoned with salt and pepper

Directions:
1. To make the pesto put all the pesto ingredients in a food processor and mix until pureed.
2. In a large bowl mix the chicken, tomatoes and 1-2 tbsp of the pesto. Spread the mixture on a wrap and fold.
3. Prepare the avocado for the side dish.
4. Store the extra pesto in the refrigerator or make a few boxes of meal prep. Luckily pesto doesn’t make wraps soggy so you can make it 24 hours ahead or leave the wrap out until day of 😊
