Gut Supporting Miso Crunch Salad

Most people focus on lettuce or spinach as a base— but what your gut actually needs is:

1.fermented foods (miso)

2.prebiotic fiber (cabbage + carrots + edamame)

Equipment

  • 1 Large mixing bowl
  • 1 Small mixing bowl

Ingredients

Salad Ingredients

  • 3 C Shredded green cabbage
  • 1 C Shredded purple cabbage
  • 1/2 C Shredded carrots
  • 1/2 C Shelled edamame
  • 3 Green onions, sliced
  • 1 C Cucumber, diced
  • 1/2 C Avocado *optional, not ideal is meal prepping or saving leftovers

Dressing Ingredients

  • 2 tbsp White Miso paste
  • 1 tbsp Tahini or coconut cream or sunflower butter
  • 1 tbsp Rice vinegar
  • 1-2 tsp Pure maple syrup
  • 1 tsp Fresh grated ginger
  • 1 Clove Garlic, grated
  • 1 tbsp Olive oil or avocado oil
  • 2-3 tbsp Water

Instructions

  • In a large mixing bowl combine all the salad ingredients
  • In a small mixing bowl whisk together the dressing ingredients until combined. Pour of the salad, mix and serve
