Ingredients:
6 Bell peppers
1lb ground beef or turkey
1 Can black beans
low sodium taco seasoning
chedder cheese
1 onion
cilantro
and whatever topping you like:olives, guac, tomatoes..

Directions:
1. Pre heat the oven to 400F
2. Line a baking sheet with tin foil. Cut the peppers to make small boats about 4 cuts per pepper. Line them up in only layer across the sheet pan
3. In a skillet heat 1 tbsp olive oil and diced onion for 3 minutes. Add beef and beans and cook until completely cooked through. Add taco seasoning and mix well for 1-2 minutes
4. Fill the peppers with the meat mixture about 1 tbsp per piece. Sprinkle cheese over every piece
5. Bake for 10 minutes
6. Remove from oven and add toppings

This recipe will work with almost any vegetable!
.
1. Preheat oven to 350F
2. Spread your cleaned and prepped veggies on a tin foil lined sheet pan.
3. Sprinkle salt, pepper, garlic powder & chili powder and about 3 tbsp Olive oil. Mix well and bake for 30 minutes or until desired tenderness
.
I like to use these for veggies for nourish bowls, side dishes and for lunch mixed with hummus

Ingredients:
2 lbs Chicken thighs
1 medium onion chopped
1 can of white kidney beans
1/3 C fresh cilantro
1 lime, juiced
1/4 tsp coriander
1/4 tsp dried oregano
2 tsp chili powder
1 tbsp cumin
3/4 tsp salt
1/4 tsp black pepper
1lb chopped white potatoes
4 Cups chicken broth
1 can green chiles, mild

Avocado & cilantro for garnish

Instructions:
1. Add 2 tbsp of olive oil to 3 qt pot. On high heat add chopped onion.
2. While the onion is cooking season your chicken with salt and pepper. Set aside.
3. Add beans, potatoes, coriander and chili powder to the pot. Lower heat to medium and cook for 3 minutes
4. Place the chicken pieces on top on the vegetable mix. Coat with the oregano and cumin. Mix. Pour in chicken broth. Cook for 15-20minutes until potatoes are tender. (Don’t push the chicken to the bottom of the pot before adding broth because it will oxidize and leave a fishy taste)
5. Add cilantro. Once wilted the chili is ready! Garnish with avocado & fresh cilantro.

1 Mango, ripe and diced
1 Can Black beans, rinsed and drained
1/4 C red onion, diced
1 C Diced tomatoes
1 C Steamed edamame
Lemon juice
Salt & Pepper to taste
1 Tbsp red wine vinegar
Optional: Chopped cilantro or basil
.
Mix & enjoy! Also works well as a topping for grilled chicken or fish

Ingredients:
2 C Edamame, cooked ( I buy it frozen at target. They have a microwaveable bag and it takes 5 min)
1 C Peas, cooked (again frozen, target)
2 Tbsp fresh mint, minced
1 Cucumber diced
1 tsp Fresh ginger
1/2 Lime, juice
2 C Greens, I used power green mix from target

Dressing:
3 tbsp Olive oil or avocado oil
1 tsp Honey
1 tsp Soy sauce, low sodium
sesame seeds-optional
.
1. Mix the dressing in a separate bowl and then pour over the salad ingredients.

Salt & Pepper

You can eat this with chips as a snack or put it in a bowl for lunch.
