Protein Pancake Bites

Ingredients: Makes about 24-30 bites, 3 bites is a serving

1 C pancake batter of your choice prepared as directed on the package (see my notes for homemade vegan version)

1 C toppings of your choice, I used strawberries, blueberries and mini dairy free chocolate chips

1 scoop protein powder

*If you plan to use these for breakfast pair them with a high protein yogurt or smoothie. As a snack these don’t require any extra protein.

*Note* Homemade vegan pancake mix:

1 1/2 C flour or Gluten free 1:1 flour

1 tbsp baking powder

1/2 tsp salt

1 tsp vanilla

2 tbsp sugar

1 c milk of your choice

1/2 C water

Directions:

1. Preheat oven to 350F

2. Prepare the batter. Divide the batter into 12 or more mini cupcake cups until they’re 3/4 of the way full

3. Sprinkle your toppings

4. Bake about 10 minutes or until the center is cooked
