Saucy Chili Steak

3 strip steaks, sliced thin
2 C cooked rice (you can use 90 second microwaveable rice to make this quicker)
3 green onions
1 yellow medium onion, sliced thin
3 tbsp olive oil
Sauce:
1 tsp fresh grated ginger
2 cloves garlic, minced
2 tbsp rice vinegar
2 tbsp sweet chili sauce (I use Gramma’s)
3 tbsp Tamari or soy sauce, low sodium
2 tbsp ketchup
1 tsp corn starch or arrowroot powder
Directions:
1. Whisk together the sauce ingredients in a small bowl and set aside
2. Heat 2 tbsp olive oil in a skillet and add the steak. Sprinkle salt and pepper. Cook until the steak is browned on both sides about 5-7 minutes. When finished put it on a plate and set aside
3. Add your onions and 1 tbsp olive oil to the same pan. Cook for about 5 minutes or until golden brown.
4. Return the steak to the pan and pour the sauce over the steak and onions. Mix well until everything is coated and allow the mixture to simmer for a couple minutes until it thickens. Serve over rice with green onion slices
