Blueberry Quinoa Breakfast Muffins

Ingredients: Makes 12
2 Scoops protein powder * optional
1 3/4 C flour, all-purpose gluten free or regular
3/4 C sugar (I tried honey and maple syrup neither worked)
1 1/2 C Cooked quinoa
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 flax eggs or 2 real eggs
2/3 C applesauce
1/2 C coconut oil or avocado oil
2 tsp vanilla extract
3/4 C blueberries
1. Preheat oven to 350F
2. In a large mixing bowl add all the dry ingredients and stir until combined
3. In a small mixing bowl mix all the wet ingredients until blended
4. Pour the wet ingredients into the dry and mix until combined
5. Fold in the blueberries
6. Bake for 25-40 minutes until the center of your muffins are cooked and toothpick comes out clean *time will vary based on size of muffin cup


Do you have to do anything to the quinoa besides cook it first? I’m very interested in using it for this recipe. It’s my first time using this ingredient 😊
