Chocolate Chip Cookie Brownies

**You can make these from scratch or by using packaged brownie mix and pre made cookie dough. I included instructions for both below

From Scratch:

Brownie ingredients:

1/2 C vegan butter

6oz vegan chocolate

1/2 C cocoa powder

1/4 C dairy free milk

2/3 sugar (granulated or coconut)

1/2 C brown sugar

1/2 C dairy free yogurt

1 tsp vanilla

1/2 tsp salt

1 1/2 C all purpose flour (regular or gluten free)

1/2 C chocolate chips or chunks

cookie dough:

1/3 C + 1/2 tbsp granulated sugar or coconut

1/2 C + 2 tbsp brown sugar

1/3 C + 2 tbsp coconut oil or avocado oil

4 tbsp dairy free milk

1 tsp vanilla extract

1 3/4 C + 1 tbsp all-purpose flour (regular or gluten free)

1 tsp baking powder

1/2 tsp baking soda

3 1/2 oz chocolate chips

pinch of salt

*If using bowed brownie mix substitute 1/4 C applesauce for each egg recommended in the recipe to make it egg free

Directions for homemade mixtures:

  1. Preheat oven to 350F. Line a 9×9 pan with parchment paper
  2. Mix the brownie ingredients and pour into the pan. Bake for 28-30 minutes. The brownies should be almost done but still jiggly
  3. While the brownies are baking make your cookie dough.
  4. Using an ice cream scooper and 2 tbsp dollops of cookie dough on top of the brownies
  5. Bake for 18 minutes or until everything is cooked through. Keep checking so you don’t burn your cookie top. they should be golden brown
  6. **If using boxed mixes bake the brownies for 10-12 minutes less than the recommended baking time on the box before adding the cookie dough. Extend the baking time to match the time suggested on the package of cookie dough
