Apple Blueberry Crumble

•High fiber, dairy free, gluten free, antiinflammatory•
Ingredients: Makes 4 servings
For filling:
2 large apples
3 C blueberries
2 tbsp arrowroot starch or corn starch
5 tbsp date sugar or 8 dates pureed
1 tsp vanilla
1 tbsp lemon juice
1 tsp cinnamon
Ingredients for topping:
1 1/2 C Oat flour
4 tbsp date sugar or brown sugar
5 tbsp tapioca flour or arrowroot starch
4 tbsp coconut oil, melted or avocado oil
2 tbsp maple syrup
Directions:
1. Preheat oven to 350F. Pick a 9×9 or 8×8 pan
2. Combine all the filling ingredients until well mixed
3. In a separate bowl prepare the topping. With your fingers flatten and break off small pieces and cover the top leaving small holes
4. Bake for 30 minutes or until the crust starts to brown



Thank you for these amazing recipes! I have celiac disease and a nut allergy. I’m also somewhat lactose intolerant. It’s exhausting to navigate eating at times but darn it I keep getting hungry and then hangry ;-)!!! Most people dont understand food allergies and autoimmune diseases and some are quite mean about it. My oldest daughter inherit this disease from me too :-(.
