Cinnamon Roll Protein Pancake Meal Prep

Ingredients: Makes 5 servings; using a 2 Cup glass bowl

2 C pancake mix

2 scopps protein powder

1/2 C yogurt of your choice

2 eggs

1 1/2 C milk of your choice

1/2 tsp vanilla extract

For cinnamon swirl:

Date syrup and a sprinkle of cinnamon

Optional icing:

3 tbsp of powdered sugar

1 tsp water

*Mix until a smooth syrup forms

Directions:

  1. Preheat oven to 350F
  2. In a large mixing bowl combine all the ingredients accept the date syrup and icing.
  3. Split the mixture evenly into the 5 meal prep bowls (about 1/2 a cup of the mixture in each)
  4. Use the date syrup to make a swirl and sprinkle cinnamon on top
  5. Bake for 30 minutes or until pancakes are cooked through in the middle

*Store for 5 days in the refrigerator

  • To reheat microwave uncovered for 1-2 minutes
