Sheet Pan Gnocchi & Sausage

Ingredients: Makes 4-6 servings
1lb shelf stable gnocchi (potato)
1 lb italian sausage removed from the casing and rolled into balls
1 zucchini
1 pint cherry tomatoes
1/2 C sundried tomatoes
4 tbsp oil from sundried tomato jar
1/2 tsbp italian seasoning
salt + pepper
*You can substitute red bell peppers, small broccoli florets or artichokes if you have a tomato allergy
Directions:
1. Preheat oven to 400F. Prep one large or two medium size sheet pans
2. Pour all the ingredients except the sausage into the pan. Mix well so everything is coated in oil.
3. Roll the sausage into small balls about 1” wide and add them to the pan. Told each one in the oil in the pain
4. Bake for 20 minutes *If your sausage hasn’t browned after 20 minutes you can add 5 minutes or broil for 2 minutes-broil works quickly so keep an eye on it!
