Dairy & Gluten Free Protein Peach Upside-down Cakes

Ingredients: Makes 12

1 1/2 C Flour, Gluten free 1:1, all-purpose flour can be used also

3/4 C coconut sugar or granulated sugar

1 tsp baking soda

1/2 tsp salt

1-2 Servings of protein powder of your choice or collagen powder- collagen powder has less of a protein flavor but less protein content

1 1/2 tsp vanilla extract

5 tbsp unsweetened applesauce or avocado oil

1 tsp apple cider vinegar

1 C water

1 C diced fresh peaches

Brown sugar for dusting

Directions:

  1. Preheat oven to 350F. Line a muffin pan with parchment cups or strips
  2. sprinkle a small amount of brown sugar at the base of each cup.
  3. Add the diced peaches to each cup
  4. In a mixing bowl combine the flour, sugar, baking soda, salt, protein powder, vanilla, applesauce, vinegar and water.
  5. Pour about 1/4 of the mixture onto each muffin well over the peaches
  6. Bake for 25 minutes
  7. Let the pan cool for 10-15 minutes before flipping over the cakes and removing the parchment paper
