Gut Healthy Breakfast Banana Bread

Equipment

  • 1 9×5 Loaf pan
  • 1 Mixing bowl

Ingredients

Wet Ingredients

  • 3 Ripe, spotty bananas
  • 2 Eggs
  • 1/3 C Nut butter, granola butter or sunbutter
  • 1/4 C Pure maple syrup
  • 1 tsp Pure vanilla extract

Dry Ingredients

  • 1 1/2 C Oat flour, gluten free
  • 2 tbsp Chia seeds optional substitute: hemp seeds, more oat flour
  • 1 scoop Collagen peptides or vegan protein powder Collagen is more gut friendly it helps support the gut lining
  • 1 tsp Cinnamon
  • 1 tsp Baking soda
  • 1/4 tsp Salt

Instructions

  • Pre heat oven to 350F. Line a 9×5' loaf pan with parchment paper or grease with coconut oil
  • In a mixing bowl combine all the dry ingredients
  • In a second mixing bowl combine all the wet ingredients. Pour the wet ingredients into the dry and mix well
  • Pour into the loaf pan. Bake for 45-55 minutes until a toothpick in the center comes out clean
