Mixed Berry Pie

•Dairy free, Gluten free, Top 9 Free
Ingredients: Makes 8 servings
5 C Mixed berries, blueberries, raspberries, black berries (I use 3 C blueberries and 1 C each blackberries and raspberries but any combo will work!)
1/2 C Sugar (granulated or coconut)
5 tbsp Corn starch
1 Pinch salt
1 tsp Vanilla extra
1 Pie crust : I use Wholly Wholesome brand they sell both gluten free and wheat based pie crusts
Optional toppings: Coconut whipped cream, ice cream, vegan ice cream
Directions:
1. Preheat oven to 425F. Set your pie crust on the counter to begin defrosting
2. In a large mixing bowl add the berries, salt, sugar, corn starch and vanilla. Mix well until the berries are coated and appear white
3. Pour all the berries and sugar mixture into the crust.
4. Bake for 55-60 minutes and allow to cool for about 45 minutes before serving.
5. If making ahead of time it can sit at room temperature for 48 hours or refrigerated for 4 days.
*Note: If some of your berries still appear white when you take the pie out of the oven, while the pie is still bubbling, use a fork or spoon to turn the berries over so the white side is down into the pie. This sometimes happens with the raspberries
