Antioxidant -rich Berry Chocolate Bars

2 9oz bags of dark chocolate chips, I used Enjoy Life Brand
1/2 C nut butter, sunflower butter or granola butter if allergic
1/4 C pure maple syrup or honey
1/4 tsp salt
1 tsp vanilla
12oz of berries, I used raspberries, blueberries and strawberries (be sure to cut the strawberries into quarters and remove the stem)
1/4 tsp ground ginger
1 tbsp hemp seeds, chia seeds or flax seeds (or mix all 3)
2 tbsp pumpkin seeds
4 tsp coconut oil or avocado oil
Directions:
- Line an 8×4 loaf pan with parchment paper
- Pour one bag of the chocolate chips into a microwave safe bowl. Add 2 tsps of coconut oil. Mix well and microwave in 30 second intervals until the chocolate is melted.
- While the chocolate is still hot add the nut butter, maple syrup, vanilla and salt. Mix until it becomes the texture of fudge.
- Press the fudge into the base of the pan. This will make your crust
- Melt the second bag of chocolate using the same method as the first
- Pour half the berries into the loaf pan. Cover with half the chocolate. Repeat in a second layer.
- Sprinkle seeds on top and refrigerate 1-2 hours before cutting
