Mojo Chicken Tacos with Avocado cilantro sauce

Adult portion 2 tacos
Child 1 taco
1lb chicken (3 breasts makes 6 tacos)
Ingredients: For 6 tacos
1lb chicken breast
6 tortillas of your choice
1/4 C Olive oil
1/2 C Orange juice
Zest 1 orange
Zest 1 lemon
1/4 C lime juice (about 2 limes)
2 Cloves garlic
1 tsp Cumin
1 tsp oregano
Salt + pepper
*optional black beans – I used Filio’s marinated black beans
Avocado Cilantro Sauce:
2 Avocados
1/2 C packed cilantro
2 tbsp white wine vinegar
1/2 Lime juice
Directions:
1. Preheat oven to 350F.
2. In a mixing bowl or baking dish add you chicken, olive oil, zest of lemon and orange, lime juice, cumin, oregano, garlic, salt and pepper. Mix well. Cover and pop in the refrigerator for 15 minutes.
3. Drain the chicken of 75% of the marinade. Put it in the oven for 30 minutes.
4. After the chicken is cooked slice it into strips. Raise the oven temp to 400F
5. Line a large baking sheet with parchment paper or aluminum foil. Spread 4 tbsp of olive oil around the baking sheet. Line your tortillas up on the sheet pan
6. Layer your tacos with beans(if using) and chicken. You could also add cheese or vegan cheese here if you’re using it. Close the taco and flip them over so both sides get coated in oil
7. After filling all the tacos place another piece of parchment paper over the top and a second sheet pan for pressure. Pop them into the oven for 16-20 minutes until the tops of the tacos are crispy
Directions for cilantro sauce:
1. While the tacos are baking, add the avocado, cilantro and vinegar to a food processor. Blend until smooth. Drizzle 1/2 lime juice over the top and serve with the tacos
