Protein Blueberry Breakfast Bread

Makes 6 servings:

If cut into 12 slices a serving size is 2 pieces: About 198 calories per serving and 18g or protein

Ingredients:

1 3/4 C Pancake mix ( protein, gluten free or regular that all work as long as it’s a “just add water” mix

1/2 C vanilla protein powder, I used Truvani **for a low protein recipe substitute more pancake flour of all purpose flour

2/3 C Milk of your choice, I used oat because we’re nut free

3/4 C Dairy free yogurt, preferably one with protein like Siggi’s brand or Cocojune which has healthy fats from coconut

2 eggs or flax eggs

1 1/2 C Fresh blueberries with some extra for topping

Directions:

  1. Preheat oven to 350F. Line a loaf pan with parchment paper. I used a 8 1/2 x 4 1/2 pan
  2. In a mixing bowl whisk the pancake mix and protein powder together.
  3. Add the liquid ingredients and mix until just combined. Over mixing will make the bread too dense
  4. Fold in the blueberries
  5. Pour the mixture into a loaf pan. Top with extra blueberries and bake 50-60 minutes
