Ingredients: Makes 12, serving size 1

1 1/2 C Flour (all purpose gluten free or regular all purpose)

3/4 C coconut sugar or granulated sugar

1 tsp baking soda

1/2 tsp salt

1 or 2 serving protein powder or collagen protein powder (vanilla or unflavored)

1 1/2 tsps vanilla extract

5 tbsp applesauce or avocado oil

1 tsp white or apple cider vinegar

1 C water

1 C Blueberries

Brown sugar for dusting

Directions:

1. Preheat oven to 350F. Prepare a 12 cup muffin pan by either greasing or using parchment paper slings or cups

2. Sprinkle a small amount of brown sugar at the bottom of each muffin cup. Spread it out so the entire bottom has a light dusting

3. Add the blueberries about 1 tbsp per cup. The entire bottom of the muffin cup should be covered in one layer of blueberries

4. In a mixing bowl combine the dry ingredients flour, salt, baking soda and sugar first. Then add the wet ingredients and stir until combined

5. Pour about 1/4 C or more batter into each muffin cup.

6. Bake for 25 minutes.

7. Let the cakes cool and then flip them over and serve. Can store in the refrigerator up to 4 days.
