Caramelized Apricot Chicken & Garlic Green Beans Sheet Pan

Equipment

  • 2 Sheet pans
  • 1 Small mixing bowl

Ingredients

For the chicken

  • 2 lbs Chicken thighs
  • 1/2 C Apricot preserves
  • 1-2 tbsp Honey
  • 1/2 Lemon, juiced
  • Salt
  • Pepper

For the String Beans

  • 1 lb String beans
  • 2 tbsp Olive oil
  • 3 Garlic cloves sliced
  • Salt
  • Pepper

Instructions

  • Pre heat oven to 425F. Line both baking sheets with parchment paper to make clean up easier
  • In a small mixing bowl combine the apricot and honey
  • On the first baking sheet spread out the chicken, Sprinkle salt and pepper on each thigh. Drizzle lemon juice on each thigh. Spread the apricot mixture over the chicken evenly
  • On the second tray mix the string beans, olive oil, salt, pepper and garlic
  • Roast the chicken on the top shelf and the beans on the second shelf.
  • 15 minutes into cooking flip the beans over
  • Check the beans again in 10 minutes to see if they're ready. They should be slightly caramelized and wilted. If not let them continue to cook with the chicken. Remove the beans before the next stop
  • At the 35 minute mark check the chicken to see that it's cooked through. If ready turn the broiler on for about 2-4 minutes. Watch the chicken carefully so it doesn't burn the broiler works very quickly!
