2lbsItalian sausage of your choiceor 1/2 sausage and 1/2 ground beef to lower the cost

1/2Yellow onion, diced

3Carrots
2ClovesGarlic
3/4COrzo, I used Jovial rice based orzo which is gluten freeBut any orzo or small pasta will work
6CLow sodium chicken brothI use Kitchen Basics
1tspItalian SeasoningDried
1/2tspSalt
1/4tsp Black pepper
1BunchSpinachAbout 2 C fresh spinach
2tbspFresh parsley, mincedOptional, for topping
Parmesan cheeseOptional, for topping
Instructions
Roll the ground sausage meat into small balls about 1' in diameter
Heat the olive oil in the dutch oven and add the sausage balls. Simmer until browned and cooked through, about 10 minutes. Be sure to stir them so all sides cook
Add the onion, garlic, carrots, celery, salt, pepper and Italian seasoning. Mix well and cook about 5 minutes until the veggies are tender
Add the orzo and broth. Bring to a boil and cook for 10 minutes
Add the fresh spinach and stir until wilted. Then remove the soup from the heat. Do a taste test to see if the salt and pepper are to your liking
Optional: Serve with fresh parsley on top or Parmesan cheese
