High Protein Avocado Toast

Equipment

  • 1 Toaster optional
  • 1 Food processor

Ingredients

  • 1 Slice Sourdough bread or bread of your choice
  • 1 Small, ripe avocado
  • 1 C White beans, drained and rinsed
  • 2 tsp Olive oil
  • 1 tbsp Lemon juice
  • 2 Eggs, cooked the way you like them
  • 1 tbsp Hemp seeds
  • 2-3 tbsp Pickled red onions (optional but great for the gut, a good substitute would be sauerkraut)
  • 1-2` tbsp Sliced green onions
  • Sprinkle salt & Pepper

Instructions

  • In a food processor combine the avocado, beans, olive oil and lemon juice. Just until combined it doesn't have to be completely smooth
  • Toast the bread
  • Cook your eggs as desired
  • Spread the avocado bean mixture on the toast, layer with hemp seeds, pickled onions, eggs, green onion and salt and pepper
