Sourdough bread or bread of your choice

Small, ripe avocado

White beans, drained and rinsed

Olive oil

Lemon juice
2
Eggs, cooked the way you like them

Hemp seeds
2-3
tbsp
Pickled red onions (optional but great for the gut, a good substitute would be sauerkraut)

Sliced green onions
Sprinkle salt & Pepper
Instructions
In a food processor combine the avocado, beans, olive oil and lemon juice. Just until combined it doesn't have to be completely smooth
Toast the bread
Cook your eggs as desired
Spread the avocado bean mixture on the toast, layer with hemp seeds, pickled onions, eggs, green onion and salt and pepper
