Peach & Avocado Cowboy Caviar

Equipment

  • 1 Large mixing bowl
  • 1 Knife
  • 1 Cutting board
  • 1 Small bowl for dressing

Ingredients

Salad

  • 1 15oz Can of chickpea rinsed and drained
  • 2 Ripe peaches, diced
  • 1 Avocado, diced
  • 1/2 English cucumber, diced
  • 1/2 C Red bell pepper, diced
  • 1/4 C Red onion, diced
  • 1/4 C Fresh cilantro, minced
  • 1/4 C Pepitas

Dressing

  • 3 tbsp Olive oil
  • Juice of 2 limes
  • 1 tbsp Honey
  • 1 tsp Dijon mustard (omit for mustard allergy)
  • 1/2 tsp Salt
  • Black pepper to taste

Instructions

  • Wash and chop all the produce. In a large mixing bowl add the diced, peaches, chickpeas, avocado, cucumber, bell pepper, red onion, cilantro and pepitas
  • In a small bowl mix together the dressing ingredients and then pour the dressing over the salad. Mix well
  • Serve immediately. *Tip if you prefer this salad cold refrigerate the produce before chopping the produce or prepare the entire salad except for the avocado and add the avocado when ready to serve
