Dry Ingredients

Vanilla protein powder
I used Truvani which is dairy free

Pumpkin Pie Spice

Wet Ingredients

Milk of your choice
I used oat milk

Egg or 3 tbsp liquid egg whites

vanilla extract

Mini chocolate chips

Pumpkin puree
Instructions
Preheat oven to 350F. Line a mini muffin tin with liners or use a non stick pan
In a mixing bow combine the dry ingredients
In a separate mixing bowl combine the wet ingredients
Pour the wet ingredients into the dry. Mix well
Fold in the chocolate chips if using
Pour the batter into each well about 3/4 full
Bake for 12-14 minutes until a toothpick comes out clean
Optional: I topped some of mine with coconut whipped cream and sprinkle of cinnamon after they cooled
