Ingredients

  • 2 English cucumbers sliced
  • 1/2 tsp Salt
  • 1 tsp Sriracha or Samabl Oelek or Sweet Chili sauce for less heat
  • 1 tsp Honey
  • 1 tsp Toasted sesame oil omit if allergic to sesame
  • 2 tbsp Tamari, coconut aminos or soy sauce
  • 2 tbsp Rice Vinegar
  • 2 tbsp Runny peanut butter or sunflower butter if allergic
  • 1 clove Garlic, minced
  • 1/2 C Chopped peanuts Optional
  • 1 Green onion, sliced Optional

Instructions

  • Wash and chop your cucumbers.
  • Add all the cucumbers to a jar. Pour the ingredients over the cucumbers
  • Close the jar and mix well! It took about 3-5 minutes to really incorporate the peanut butter
  • Eat immediately or refrigerate for 20 minutes so the cucumber soak up more flavor
