Winter Salad

Equipment

  • 1 Large salad bowl

Ingredients

  • 1 Container Baby crisp green leaf, I used Little Leaf Farms Brand
  • 1 Container Baby red& Green leaf, I used Little Leaf Farms Brand
  • 1 6.5oz Beets, I used Love Beets brand White Wine Balsamic flavor. I cut these into quarters
  • 1/2 C Feta cheese, I used dairy free Follow Your Heart Brand feta crumbles
  • 1 C Roasted butternut squash ( you can buy this pre cooked in the frozen isle)
  • 1 Large Green pear or Asian pear, sliced
  • 1 English cucumber, diced
  • Optional: Peptitas, nuts, dried cranberries

Honey Citrus Dressing

  • 1 Orange, juiced
  • 3 tbsp Honey
  • 1 tbsp Lime juice
  • 1 tsp Orange zest
  • 1/2 tsp Dijon mustard
  • 1/4 C Avocado oil
  • Optional: Finely diced fresh mint or basil

Instructions

  • Cook you butternut squash according to the directions on the package
  • Wash and chop all your veggies
  • In a large bowl combine the lettuce, beets, pear, squash, feta cheese and cucumber
  • In a small pitcher whisk together the dressing ingredients
  • Pour the dressing over the salad when ready to serve
