Beets, I used Love Beets brand White Wine Balsamic flavor. I cut these into quarters

Feta cheese, I used dairy free Follow Your Heart Brand feta crumbles

Roasted butternut squash ( you can buy this pre cooked in the frozen isle)

Green pear or Asian pear, sliced

English cucumber, diced
Optional: Peptitas, nuts, dried cranberries
Honey Citrus Dressing

Orange, juiced

Lime juice

Orange zest

Dijon mustard

Avocado oil
Optional: Finely diced fresh mint or basil
Instructions
Cook you butternut squash according to the directions on the package
Wash and chop all your veggies
In a large bowl combine the lettuce, beets, pear, squash, feta cheese and cucumber
In a small pitcher whisk together the dressing ingredients
Pour the dressing over the salad when ready to serve
