15 Minute Anti-Inflammatory Chicken Bruschetta Pasta

Ingredients: Serves 4-6
1 rotisserie chicken, chopped
1/2 C fresh basil
2 cloves garlic
3 C grape tomatoes quartered
1 tbsp balsamic vinegar reduction
8oz Pasta, I used cassava based you can also use rice based
2 tbsp olive oil
1/4 red onion, diced
salt & pepper

Directions:
1. Boil the pasta as directed on the package and drain.
2. While the pasta is cooking heat the olive oil in a skillet. Add the onions and cook 3 minutes until soft. Add the garlic for 30 seconds.
3. Add the tomatoes and sauté for 3-5 minutes. If you need extra liquid you can steal 1/4 C of water from the pasta pot.
4. Add the chicken and half the basil. Pour the cooked pasta into the skillet and mix well
5. Serve warm and top with the residual basil and drizzle balsamic vinegar.
