20 Minute Honey Garlic Chicken

*Could be made soy free by substituting coconut aminos for soy sauce/ tamari and choosing a different vegetable
*To make low carb: Omit the corn starch, swap the rice for cauliflower rice and cut the honey into 2 tbsp
Ingredients: Makes 4-5 adult servings
1 1/2 lbs Chicken breast, cubed
4 tbsp arrowroot powder or corn starch
3 tbsp avocado oil
2 stalks green onion, sliced
Sauce ingredients:
1 tbsp fresh grated ginger
2 cloves garlic, minced
1/4 C honey
1/3 C tamari or low sodium soy sauce or coconut aminos
3 tbsp no added sugar ketchup
2 tsp avocado oil
Directions:
1. Prepare the sauce by whisking all the ingredients together and set aside
2. Heat the oil in a skillet. Dredge the chicken pieces through the arrowroot powder and put them in the oil. Cook until golden brown about 7-10 minutes.
3. Add 4 tbsp of the sauce and coat all the chicken pieces in it.
4. Add the rest of the sauce and allow to simmer for 4-5 minutes the sauce will thicken
5. Add the green onion, stir and serve!
