Apple Pie Bread

1/2 C Vegan butter
1/2 C Pure maple syrup
1/2 C Applesauce
1 tsp vanilla
2 C Flour, regular or all-purpose gluten free
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp apple pie spice
1/2 C milk of your choice
2 large apples, I use granny smith, peeled and diced small
1 1/2 tsp cinnamon
1/4 C brown sugar or coconut sugar
Optional toppings:
1. Cinammon and sugar mixed together and sprinkles on top before baking
2. Vanilla icing: Mix 1/4 C powdered sugar with 1-2 tsp of water and drizzle on top after the bread has cooled from baking
Directions:
1, Preheat oven to 350F. Prepare a loaf pan 8.5 x 4.5. Take butter out of the refrigerator to warm
2. In a small mixing bowl mix the apples sugar and cinnamon and set aside
3. In another mixing bowl whisk together the dry ingredients flour, baking powder, baking soda, spices and salt.
4. In a third large mixing bowl using a hand mixer beat the butter and maple syrup about 4-5 minutes until combined.
5. Add the applesauce and vanilla mix again for 1 minute
6. Pour the dry ingredients into the wet and add the milk. Mix until combined.
7. In the loaf pan put half the batter mixture. Layer with the entire apple mixture. Layer the rest of the batter on top. If you’re using the cinnamon sugar topping sprinkle it on now and bake for 55 minutes. If you’re using icing wait until after baking the the bread has cooled
8. Allow to cool completely before slicing
