20 Minute Sausage & Orzo Pasta

Ingredients: Makes 4 adult servings
2 tbsp olive oil
1lb sausage of your choice, I used italian sausage
1 onion, diced
1/4 C sundried tomatoes diced
2 cloves garlic
1 1/2 C low sodium chicken broth is used Kitchen basics brand
1 C marinara sauce, I use Rao’s
1 C orzo, you can use rice based made by Jovial or regular both will work
2 C fresh spinach or 1 C frozen
2 tsp italian seasoning
Directions:
1. In a skillet heat 1 tbsp olive oil on medium high heat and add the sausage. Cook u til brown and cooked through
2. Remove the sausage from the skillet and set aside
3. Add one tbsp olive oil to the skillet, the onions and sundried tomatoes. Cook about 4 minutes until the onions start to brown and soften
4. Add the garlic and italian seasoning mix for 30 seconds
5. Add the broth, marinara sauce, sausage and orzo and bring it to a boil. Once boiling reduce to a simmer and let simmer 12 minutes. Store occasionally to avoid the orzo sticking. If the heat is too high you may need to add more broth so keep an eye on it
6. If using fresh spinach add it at the end and stir in until wilted and serve. If using frozen spinach add it the mixture when 5 minutes are remaining and cook until completely soft
