Dairy-Free Breakfast Quesadilla with Turkey Sausage & Pico

Ingredients
Homemade turkey sausage
4 oz ground turkey 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp dried sage 1/4 tsp smoked paprika pinch sea salt pinch black pepper tiny drizzle maple syrup (optional)
Quesadilla
1 medium tortilla 2 eggs 1/3 cup dairy-free shredded cheese cooked turkey sausage, crumbled 1 tsp avocado oil or olive oil spray
Pico de gallo
1/2 cup diced tomatoes 1 tbsp diced red onion 1 tbsp chopped cilantro squeeze of lime pinch sea salt
Instructions
1) Cook the turkey sausage
Mix the ground turkey with the seasonings.
Shape into a thin patty and cook in a skillet over medium heat for 3–4 minutes per side until fully cooked.
Remove and crumble.
2) Scramble the eggs
In the same pan, whisk the 2 eggs.
Cook gently over low-medium heat until just softly scrambled.
Remove from heat.
3) Make the pico
Mix tomatoes, onion, cilantro, lime, and salt in a small bowl.
Set aside.
4) Assemble the quesadilla
Place the tortilla in the skillet.
On one half, add:
dairy-free cheese scrambled eggs crumbled turkey sausage a little extra cheese on top
Fold over.
Cook 2–3 minutes per side until golden and crispy.
The cheese should melt and help hold everything together.
5) Serve
Slice into triangles and serve with pico on the side.
Optional: avocado slices on top are amazing here.
This one tastes very “restaurant brunch” style but still blood-sugar balanced.
