Apple Cinnamon Quinoa Bake

1 serving has about 160 calories, 11g protein, 5g fiber, 29g carbs

*This amount of protein is ok for children however for adults 30g of protein is recommended for breakfast so you can pair this with a dairy free high protein yogurt or smoothie

Ingredients: Makes 4 servings

2 Large apples, cubed

1 C quinoa, dried

2 eggs of flax eggs

2 C non-dairy milk, I use Pacific oatmilk

1 tbsp cinnamon

1/4 C Applesauce

1 scoop protein (optional, however excluding the protein the breakfast will lose about 7g of protein per serving)

2 tbsp pure maple syrup

Directions:

1. Preheat oven to 375F. Prepare an 8×8 baking dish by lining it with parchment paper or an oil coating

2.Pour the diced apples, maple syrup, apple sauce and quinoa evenly into the baking dish.

3. In a small mixing bowl whisk together the milk, eggs, protein & cinnamon.

4. Gently pour the milk mixture over the apples.

5. Bake for about 55 minutes until the center is completely cooked. Allow the bake to cool for at least 20 minutes before serving. Store in refrigerator for up to 4 days.

  1. Hi! I can’t wait to try this recipe. Can I use eggs instead of flax eggs? I have chickens so I have plenty of eggs. Will regular eggs work? I can also add flax to the recipe for fiber. Any insight is greatly appreciated. Thanks so much!
