Dairy, Gluten and No Refined sugar free Chocolate Chip Cookies

Ingredients: Makes 14 cookies

1 ripe banana

2 C rolled oats (for chewy cookies) OR 1 3/4oat flour (for cake like cookies)

1 C applesauce, unsweetened

1/4 C nut butter or sunbutter or granola butter

1 tsp cinnamon

1 tsp vanilla

Directions:


  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mash the banana in a large bowl until smooth.

  3. Stir in the applesauce, nut butter, vanilla, and cinnamon until well mixed.

  4. Add the oats (or oat flour) and stir until the dough comes together.

  5. It should be thick and slightly sticky — if too wet, add 1–2 tablespoons more oats.

  6. Scoop cookies (about 1½ tablespoons each) onto the baking sheet and flatten slightly; they won’t spread much.

  7. Bake for 12–15 minutes, until the edges are set and the tops look dry.

  8. Cool on the pan for 5 minutes, then transfer to a rack to finish cooling.
