Energy Balls
Coconut Matcha & Bluberry

2 tsp Matcha powder (I used Pique brand)
2 C Dates, pitted
3/4 Almond flour
1 tsp cinnamon
2 tsp Vanilla extract
1 C dried and shredded coconut Split into 2
1/2 C Hemp seeds
1/4 C water
**You can also roll some of these in dark chocolate for an extra treat
1. Find a sheet pan or dish that will fit in your freezer and line it with parchment paper
2.In a food processor blend all the ingredients except 1/2 C of the coconut
3. Spoon out 2 tablespoons into your hand and roll it into a ball. Dip the balls into the extra coconut as a coating.
3. Freeze the balls for 2 hours. Let them thaw for a few minutes before eating
Blueberry:
2 tsp fresh blueberries
2 tsp dried blueberries
1/2 C pitted dates
1/3 C nut butter or granola butter
1 tbsp maple syrup
1/2 C shredded coconut
1 tsp flax seeds
2 tbsp water
1. In a food processor blend the nut or granola butter, dates and water to create a paste. Add the flax seeds, blueberries, and coconut mix and then add the maple syrup last. Blend until combined and sticky.
2. Roll the mixture into one inch balls and refrigerate them on a parchment lined dish or tray for 2 hours. Store in an airtight container in the refrigerator for up to 5 days
