Gluten Free Apple Pie Crumble Bars

Ingredients: Makes 12 bars **If you want a very tall, thick bar double the recipe and the cooking time for the apples. The baking time can stay the same
Topping & Crust:
1 1/2 C GF rolled oats
1 C oat flour
3/4 C coconut sugar
1/2 tsp cinnamon
1/4 tsp salt
1/2 C butter of your choice, I used vegan butter for dairy free. You can also use coconut oil
4 tbsp pure maple syrup
Filling:
6 Apples, honeycrisp or green apples work best, Peeled, cored and sliced thin
1 tbsp lemon juice
1 tsp cinnamon
1 tbsp cornstarch or arrowroot powder
4 tbsp pure maple syrup
1/2 C water
Directions:
- Preheat oven to 350F. Line a 9×9 pan with parchment paper
- In a small sauce pan combine the apples, water and cinnamon and simmer for 10 minutes
- Add the cornstarch and maple syrup. Stir until the cornstarch is dissolved.
- While the apples are cooking prepare the crust
- In a mixing bowl combine the oats, oat flour, sugar, cinnamon, salt, butter and maple syrup until it’s crumbly and wet
- Put half the crust mixture into the base of the pan making an even layer
- Pour the cooked apples on top
- Sprinkle the remaining crust mixture on top
- Bake for 30 minutes
