Gluten Free Apple Pie Crumble Bars

Ingredients: Makes 12 bars **If you want a very tall, thick bar double the recipe and the cooking time for the apples. The baking time can stay the same

Topping & Crust:

1 1/2 C GF rolled oats

1 C oat flour

3/4 C coconut sugar

1/2 tsp cinnamon

1/4 tsp salt

1/2 C butter of your choice, I used vegan butter for dairy free. You can also use coconut oil

4 tbsp pure maple syrup

Filling:

6 Apples, honeycrisp or green apples work best, Peeled, cored and sliced thin

1 tbsp lemon juice

1 tsp cinnamon

1 tbsp cornstarch or arrowroot powder

4 tbsp pure maple syrup

1/2 C water

Directions:

  1. Preheat oven to 350F. Line a 9×9 pan with parchment paper
  2. In a small sauce pan combine the apples, water and cinnamon and simmer for 10 minutes
  3. Add the cornstarch and maple syrup. Stir until the cornstarch is dissolved.
  4. While the apples are cooking prepare the crust
  5. In a mixing bowl combine the oats, oat flour, sugar, cinnamon, salt, butter and maple syrup until it’s crumbly and wet
  6. Put half the crust mixture into the base of the pan making an even layer
  7. Pour the cooked apples on top
  8. Sprinkle the remaining crust mixture on top
  9. Bake for 30 minutes
