Gluten Free Sheet Pan Sausage, Gnocchi, Butternut squash & Brussels Sprouts

Ingredients: Makes 4 servings
1lb chicken sausage of your choice, casing removed and rolled into balls or use ground sausage rolled into small balls about 1 tbsp of meat each
3lbs brussels sprouts, halved
1lb cubed butternut squash or 1 butternut squash peeled and diced
1lb shelf stable gnocchi, gluten free
4 tbsp olive oil
Salt & Pepper
Optional: onion powder (about 1 tsp)
Directions:
- Preheat oven to 400F. Line a large baking sheet with parchment paper. If you don’t have a large baking sheet use two medium sized
- Pour all the ingredients onto the try and mix with oil, salt and pepper until everything is coated
- Bake for 30 minutes. Then turn heat to 425F for an additional 5 minutes to brown your sausage and brussels
