Gluten Free Sheet Pan Sausage, Gnocchi, Butternut squash & Brussels Sprouts

Ingredients: Makes 4 servings

1lb chicken sausage of your choice, casing removed and rolled into balls or use ground sausage rolled into small balls about 1 tbsp of meat each

3lbs brussels sprouts, halved

1lb cubed butternut squash or 1 butternut squash peeled and diced

1lb shelf stable gnocchi, gluten free

4 tbsp olive oil

Salt & Pepper

Optional: onion powder (about 1 tsp)

Directions:

  1. Preheat oven to 400F. Line a large baking sheet with parchment paper. If you don’t have a large baking sheet use two medium sized
  2. Pour all the ingredients onto the try and mix with oil, salt and pepper until everything is coated
  3. Bake for 30 minutes. Then turn heat to 425F for an additional 5 minutes to brown your sausage and brussels
