Gut Healthy Papaya Mousse

Ingredients: Makes 2 Servings
1 C ripe papaya (you can also use pineapple)
1 C coconut kefir. I used KefirLab brand
1/4 C coconut yogurt greek style like Cocojune-has to be thick
1 scoop collagen peptides, I used Vital Proteins brand
1 tsp grated ginger
2 1/2 tsp grass fed gelatin or agar agar
1/4 C coconut water (to bloom gelatin)
Optional: squeeze of lime
For topping: Fresh raspberries & Coconut whipped cream. You can also use pineapple, blueberries, blackberries, lime zest
Directions:
- Bloom the gelatin:
In a small bowl, sprinkle 2½ tsp gelatin over ¼ cup cool water or coconut milk.
Let it sit 5 minutes until spongy. - In a blend combine the papaya, yogurt, kefir, ginger, collagen, gelatin and squeeze of lime. Combine until smooth
- Divide into two jars. Cover and refrigerate at least 1 hour
- Top with fresh raspberries and coconut whipped cream for serving or fruit of your choice
