High Protein Baked Dumplings Recipe

Equipment

  • 1 9X13 Baking dish

Ingredients

  • 1 lb Rotisseries chicken, diced
  • 14-20 Dumplings or wontons, frozen
  • 1 13.5oz Can coconut milk
  • 3 tbsp Thai red curry paste
  • 2 tsp Fish sauce Can omit for fish allergy without substitution
  • 3 tbsp Soy sauce or tamari
  • 2 tbsp Sweet chili sauce If you want the original spicy flavor use 1 tbsp chilli crunch, I used sweet chili because it's not spicy and kids will actually eat it
  • 3 Cloves Garlic, minced
  • 1/2 tsp Fresh ginger, minced
  • 2 C Broccoli Florets, diced small

Toppings

  • 1/4 C Fresh scallions sliced
  • 1/4 C Fresh chopped cilantro
  • 1 tbsp Sweet chili sauce- optional
  • 2 C Cooked Rice- optional

Instructions

  • Pre heat oven to 375F
  • In a 9×13 baking dish mix the coconut milk, garlic, ginger, thai red curry, fish sauce and soy sauce.
  • Add the broccoli and chopped chicken.
  • Place the dumplings in the pan with none of them overlapping.
  • Cover tightly with tin foil and bake about 25 minutes until the broccoli is tender and the dumplings are cooked through
  • Serve with toppings and rice on the side
