High Protein Turkey Sausage Breakfast Skillet

•Dairy free, Gluten free, Sesame, soy, nut, egg free•
Ingredients: Makes 4 servings
1 Large sweet potato
1 medium yellow onion
1 Zucchini
1 Butternut squash
1lb Turkey sausage or ground turkey 2 tsp poultry seasoning
1/2 tsp fine grain sea salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/8 tsp allspice
1 avocado cut into 4
Optional: Fresh cilantro or parsley
Directions:
1. In a skillet cook the turkey for about 8 minutes until completely cooked. Place the turkey in a dish and set aside
2. In the same pan add the onions and 2 tbsp olive oil. Let the onions cook for about 4-5 minutes
3. Add the butternut squash, potatoes and zucchini and cook for 20 minutes uncovered mixing frequently
4. Return the turkey to the pan and cover. Lower the heat to low-medium and allow to sit for 5 minutes, mixing once per minute. Serve warm with avocado

I made this recipe & LOVED it. I used all frozen veggies to make this easier. I’m going to keep doing that since the veggies are said to be picked & frozen at the best ripeness. I LOVED the combo of squash & sweet potato. YUM!! Your recipes are tastier than anything else I can think of…mmm, maybe not my shrimp scampi…LOL, but I don’t make that too often.
