High Protein Cauliflower Fried Rice Breakfast Meal Prep

Equipment

  • 1 Large sheet pan
  • 1 skillet

Ingredients

  • 6 Large Pasture raised eggs
  • 1 Frozen package of cauliflower fried rice *the target version is sesame oil free if you have a sesame allergy Or frozen riced cauliflower, peas and carrots
  • 2 tbsp Extra virgin olive oil
  • 12 Amylu breakfast bites
  • 1-2 C Berries

Optional toppings

  • Candied jalapenos
  • Hot sauce or sriracha
  • Sliced green onions

Instructions

  • Pre heat oven to 375F. Line a large baking sheet with parchment paper
  • Gently crack the eggs onto the parchment paper. Sprinkle salt and pepper
  • Bake the eggs for 9-12 minutes until cooked through.
  • While the eggs are cooking add the cauliflower and olive oil to a skillet and cook for about 9 minutes until it's cooked through and golden
  • Prepare the Amylu breakfast bites as directed on the package
  • Divide the cauliflower, breakfast bites and eggs into 2 portions. Add berries and you're ready!
