High Protein Cauliflower Fried Rice Breakfast Meal Prep
Equipment
- 1 Large sheet pan
- 1 skillet
Ingredients
- 6 Large Pasture raised eggs
- 1 Frozen package of cauliflower fried rice *the target version is sesame oil free if you have a sesame allergy Or frozen riced cauliflower, peas and carrots
- 2 tbsp Extra virgin olive oil
- 12 Amylu breakfast bites
- 1-2 C Berries
Optional toppings
- Candied jalapenos
- Hot sauce or sriracha
- Sliced green onions
Instructions
- Pre heat oven to 375F. Line a large baking sheet with parchment paper
- Gently crack the eggs onto the parchment paper. Sprinkle salt and pepper
- Bake the eggs for 9-12 minutes until cooked through.
- While the eggs are cooking add the cauliflower and olive oil to a skillet and cook for about 9 minutes until it's cooked through and golden
- Prepare the Amylu breakfast bites as directed on the package
- Divide the cauliflower, breakfast bites and eggs into 2 portions. Add berries and you're ready!
