High Protein Cookie Dough Cups

* Protein amount will vary based on the brands you choose to use
Ingredients: Makes 30 pieces, serving size is 4
1 C Dairy free yogurt, I used Cocojune
2 scoops vanilla protein
1/4 C Nut butter, Sunflower butter or granola butter (don’t use granola butter for insulin resistance)
1 tsp vanilla extract
1 tbsp pure maple syrup (OMIT if you have insulin resistance)
3 tbsp flour of your choice (Almond, Cassava, Tigernut, Coconut)
1/4 C mini chocolate chips, dairy free I used Enjoy Life Brand
pinch of salt
1/2 C Chocolate chips for melting + 1 tsp coconut oil or avocado oil
Directions:
1. Melt the chocolate as directed on the package with oil of your choice.
2. Pour a small amount of chocolate into each cup about 1/4 tsp. Use a cluster of toothpicks (I used 3) to coat the sides of the mold with chocolate
3. Pop the mold into the freezer while you make the filling
4. In a small mixing bowl combine yogurt, protein, granola butter, vanilla, maple syrup and almond flour. After completely mixed add the chocolate chips.
5. Pour a small amount of yogurt mixture into each cup leaving some room at the top for more chocolate
6. Cover the yogurt with the rest of the chocolate and pop into the freezer for at least an hour
